
I enjoy game meats in the winter — they’re rich and hearty, and when paired with a big bold red or your favorite brew, can send you deep into hibernation. The other day I grilled some bison burgers and whipped up a spicy mayo spread: 1/4 cup mayonnaise, 1/4 teaspoon each of cayenne, sweet paprika, and curry powder. The assertive meatiness of the bison is strong enough to support the bold flavors of the mayo. Now it’s time for a long winter’s nap.

we’re on the same page, i made bison chili the other day! they say game meat is healthier than regular corn fed cattle. i just say it’s delicious.
Yes, apparently game meat tends to be lower in saturated fat and has more protein. Good and good for you!
